Location: The Mont de Milieu is located on the road to Tonnerre, after the Montée de Tonnerre and le Chapelot premiers crus.

Where it got its name from: Its name derives from the fact that the Mont de lieu is an area separating Burgundy from Champagne, as shown by the dividing boundary stone at the top of the hill.

Characteristics 

Grape variety : Chardonnay

Terroir : Kimmeridgien 
(limestone made up of a conglomerate of Exogyra virgula oyster fossils)

Aspect: Due south, ending south-east, in the valley going towards Fleys. This ensures a higher average temperature and longer exposure to sunshine. These conditions ensure high quality)

Tasting notes :

Visual: pale golden colour

Nose: Aromas of almonds and apricots, with an ethereal touch of lemon. 

Palate: Straightforward at first due to its youth, then grapefruit aromas are revealed. A lovely minerality emerges with gunflint notes. Above all a wine for laying down, this premier cru Chablis is worth allowing the time to reveal itself fully.


Practical guidelines :

Food/wine matches: Top-quality fish (monkfish, sole or turbot), either meunière or with a cream sauce, white meat (poultry or veal). 

Present and future: As a product of its terroir, this young wine is still keeping its guard up. It will be ideal for tasting when it has been aged for around 3 years. It will keep for between 8 and 10 years.
